Black Bean Quinoa Salad with Lime Dressing

Black Bean Quinoa Salad With Lime Dressing

Ingredients
  

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 1 can black beans, drained and rinsed
  • 1 cup orange pepper, chopped
  • 1 cup grape tomatoes, quartered
  • 1 cup corn, cooked

Dressing

  • 3 tbsp lime juice, fresh
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tsp cumin, ground
  • 1 tsp oregano, dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper, ground

Instructions
 

  • Rinse the quinoa just before cooking.
  • In a saucepan, bring 2 cups vegetables broth to a boil. Add quinoa and reduce the heat to low. Cover and simmer for 20 minutes until the broth is absorbed and the quinoa is tender.
  • In a small bowl, whisk together all the dressing ingredients
  • In a large bowl, combine quinoa, black beans, orange peppers, tomatoes, corn. Toss with the dressing.
  • Enjoy immediately, or store in a covered container for later.
