Black Bean Quinoa Salad With Lime Dressing
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth (or water)
- 1 can black beans, drained and rinsed
- 1 cup orange pepper, chopped
- 1 cup grape tomatoes, quartered
- 1 cup corn, cooked
Dressing
- 3 tbsp lime juice, fresh
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, minced
- 1 tsp cumin, ground
- 1 tsp oregano, dried
- 1/2 tsp salt
- 1/4 tsp black pepper, ground
Instructions
- Rinse the quinoa just before cooking.
- In a saucepan, bring 2 cups vegetables broth to a boil. Add quinoa and reduce the heat to low. Cover and simmer for 20 minutes until the broth is absorbed and the quinoa is tender.
- In a small bowl, whisk together all the dressing ingredients
- In a large bowl, combine quinoa, black beans, orange peppers, tomatoes, corn. Toss with the dressing.
- Enjoy immediately, or store in a covered container for later.
